
Quinoa green peas and feta salad

For a truly refreshing salad, go for fresh herbs.
Ingredients

150g of feta
200g of peas
200g of flat green beans
120g of cooked quinoa
1 small red onion
1 handful of shoots or young herbs
A few mint leaves
A few sprigs of parsley or coriander
1 tbsp of seeds (sunflower, pumpkin or sesame)
For the lightened lime vinaigrette
The juice of 2 limes
2 tbsp olive oil
1 tsp of honey
1 tsp mild mustard
Salt
Pepper
Directions
Start by cooking the vegetables.
Plunge the chopped peas and flat beans into a saucepan of boiling salted water for 5 to 8 minutes. Then immediately cool them in cold water to preserve their bright green color.
Prepare the vinaigrette. In a bowl, mix the lime juice, olive oil, honey, and mustard. Season with salt and pepper to taste.
In a large bowl, combine the quinoa with the green vegetables, sliced red onion, fresh herbs, and sprouts. Crumble the feta generously over the top, then drizzle with the lime vinaigrette.
Serve chilled and add a few seeds!
